chewy granola bars for mom + toddler
ya’ll know how much i love being adventurous with my kiddo’s palate, always trying to create new, healthy and delicious things that he will love while also nourishing his body! (hope you all are loving his IG account: dailysawyer!) i was brainstorming healthy snack ideas for the airplane, as we had a family vacation to texas and florida coming up, and ended up creating something so darn delish i wonder who was eating more of them…me or him? check it out below for the recipe deets!
chewy granola bars
serving size: 8
total time: 1 hour
2 cups rolled oats
1/4 cup unsweetened coconut chips
1/4 cup freeze dried strawberries
1/4 cup slivered almonds, crushed
1/4 cup coconut oil
1/2 cup honey
1 tsp almond extract
1 tbsp ground flax seed
1 tbsp chia seed
toss the rolled, oats, coconut chips, strawberries, almonds and flax seed, and chia seed in a large bowl.
combine honey and coconut oil in another small bowl. pop into the microwave for 15-20 seconds until the mixture is melty. stir in almond extract. pour over the dry ingredients and combine well.
press the mixture into a parchment lined bread pan. pop into the fridge for at least an hour until hard. cut into bars and serve!
mom (and dad - our ultimate taste tester) couldn’t resist this delish snack! it’s sweetened by the honey with a pop of almond, it’s just so good…and easy! believe it or not, we had all this stuff in the house, so i was even more happy with how it turned out! enjoy!
